Ingredients:

  • 300g dangmyeon (glass noodles)
  • 200g beef (thinly sliced for bulgogi)
  • 1 onion
  • 1/2 carrot
  • 3 shiitake mushrooms
  • 1/2 bunch spinach
  • 4 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon sesame oil
  • A pinch of black pepper
  • Cooking oil

Instructions:

  1. Cook the dangmyeon in boiling water according to package instructions, then drain and rinse with cold water.
  2. Marinate the beef with the marinade ingredients (1 tablespoon soy sauce, 1/2 tablespoon sugar, 1/2 tablespoon minced garlic, 1/2 tablespoon sesame oil, a pinch of black pepper) in a bowl for about 20 minutes.
  3. Julienne the onion, carrot, and shiitake mushrooms. Blanch the spinach in boiling water for a few seconds, then rinse with cold water and drain.
  4. Heat cooking oil in a pan and stir-fry the onion, carrot, and mushrooms. Add the marinated beef and continue to stir-fry until cooked through.
  5. Add the cooked dangmyeon and spinach to the pan. Pour in the remaining sauce ingredients (3 tablespoons soy sauce, 1.5 tablespoons sugar, 1/2 tablespoon sesame oil) and toss to coat everything evenly.
  6. Season with black pepper and drizzle with a bit more sesame oil. Serve immediately.
